Ingredients:
- 8 tostada shells (or corn tortillas)
- 3 medium tomatoes (diced)
- 4 medium avocados (diced)
- 3 tablespoons red onion (finely chopped)
- ¼ cup cilantro (finely chopped)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ¾ teaspoon salt
- Juice of 1 lime
- 15 ounces cans low-sodium black beans (drained and rinsed)
- 3 cups shredded chicken (rotisserie or chicken breast)
- ½ cup cotija cheese (or feta, crumbled)
- Cooking spray (I use Misto) for greasing
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Arrange the tostada shells on a baking sheet and lightly
spray them with cooking spray. Bake for about 5-7 minutes or until they are
crispy.
3. In a bowl, mix the diced tomatoes, avocados, red onion,
cilantro, ground cumin, chili powder, salt, and lime juice to make a fresh
salsa.
4. Heat the black beans in a saucepan over medium heat until
warmed through.
5. Assemble the tostadas: Spread a layer of black beans on
each tostada shell, followed by shredded chicken.
6. Top with the fresh salsa mixture and crumbled cotija
cheese.
7. Serve immediately and enjoy!
